Product Review: Instant Pot

I am a busy working mom of 2 kids. I try to eat healthy and achieve home cooked meals for my family most nights. You know…no drive thru, no crap out of a box, all the main food groups, etc. etc. Given my work hours, commute time and our busy lives this becomes a struggle and I typically rely heavily on my slow cooker. Problem with it is I make all these great “dump” meals that I can freeze until I’m ready to use. Then I just thaw, cook it in my slow cooker, and wallah…..a fabulous tasting meal. Or in my case….not so much. Typically dry, overcooked, mush related to the length of time the food spends in my slow cooker and the high temps required of the manufactures for food safety. Because of my perpetual dilemma I went on a search for a better slow cooker or other option for my family. After some searching a found the Instant Pot!!

The Instant Pot that I have is an IP-Duo60. It is a 6 quart 7 in 1 multicooker. It is an electric pressure cooker, rice cooker, slow cooker, saute pot, yogurt maker, etc. And it makes the BEST. FOOD. EVER. (In my opinion of course). I have had my Instant Pot about 3 weeks and it has totally changed the way I make dinner. All those “dump” meals that would sit in the slow cooker for 10+ hours I now make in 30 mins after I get home. My first test was to make round steak one night. I had dinner on the table in about 25 mins start to finish and when I went to get the meat out of the Instant Pot it fell apart! Not only was it tender it tasted great. The next night I made a Caribbean Jerk Chicken recipe from The Crockin’ Girls but did it in the Instant Pot instead. It also was great and super fast. I’ve since made soup a Thai shrimp soup, cooked a whole chicken to have in the fridge for meals during the week, made pot roast, and finally found a way I can make rice that isn’t mushy.

This little appliance has totally changed the way I am able to make dinner for my family. If you struggle with how to work and get dinner on the table fastĀ  with all your other responsibilities I highly recommend you check out the Instant Pot.
