Spoon and Stable

There is no better way to experience a city than by eating their food. I’m traveling for work at in Minneapolis. I’ve never been here before but lined up some great places to eat.

First on the docket…..Spoon and Stable.

Spoon and Stable is located in the North Loop Neighborhood of Minneapolis and is actually located in an old stable from the early 1900s. The food focuses on seasonal ingredients with a French flair.

I had the Mediterranean Sea Bass with baby artichokes, beech mushrooms, grilled leeks, and sorrel sauce. It had a wonderful earthy flavor with some brightness from the sauce. The sea bass was perfectly cooked and the skin was nice and crispy. Sorry no pic. It was dark and blurry.😦

For dessert I chose the Poppy Seed Angel Food Cake with rhubarb, lemongrass ice cream, and pistachios. This dessert was so complex, yet light and refreshing. Every bite was another adventure with different flavors and textures. The coolness of the rhubarb, the creaminess of the ice cream, and crunch from the pistachios.

My colleges ordered Blackberry and Beewax Crema with sesame brittle, bee pollen and cocoa nibs along with the Honey and Cream Cake with sweetened condensed milk ice cream and pears.

All the desserts were wonderfully composed with complex flavors and textures. They were light with each bite giving you a new experiences. If you go to Spoon and Stable you MUST save room for dessert.

At the end of our meal we got a cute little tin of yummy goodies. The macaroon, jelly, and chocolate were so good.

Food wise, Spoon and Stable was amazing with lots of complex favors and seasonal ingredients. The service was a bit lacking but overall it was a great experience. If you are in the Minneapolis area you should Spoon and Stable on your list!

Stitch Fix #5

I got my 5th Stitch Fix yesterday. At least I think it was my 5th…not sure…..I’ve lost count.

Anyway, it had some pretty nifty pieces in it. Take a look and let me know what you think I should keep.

First up is the Brixton Ivy Donnie Dress in Navy for $68.

Next up are the Kut from Kloth Siena Cropped Pant ($58) and the Brixton Ivy Eugene Swiss Dot Blouse ($68)

Pardon the random note taped to the wall. I was using it to help my camera focus since I was taking these on a timer, and didn’t get in front of it for the pic. Tried again and the lighting was horrible. Oh well….

Overall the Fix this times was pretty cute. I like the pants as they are a really pretty color of blue and versatile. The Market and Spruce top is cute too, super soft, and versatile. Not 100% on the blouse and the dress. What are your thoughts?

That Mom

Though I try really, really hard not to be, I’ve realized I’m that mom.

I’m that mom who let her son wear red pants and a green John Deere shirt to school, even though it didn’t match, because that’s what he wanted to wear. And I didn’t want to fight the battle. 

I’m that mom who holds up the drop off line at my son’s school. I only get to drop him at “big school” once a week and he wants to get dropped off like the other kids. But our car door is heavy, he has to climb over his brother, and well he is kinda slow and clumsy so we hold up the line. Sorry!!! 

I’m that mom who sent her son to school in a shirt that is 2-3 sizes too big with pants that are at least 3 inches too short. He looks like we can’t afford clothes…as long as you don’t look at the brand new Nike tennis shoes he’s wearing. 

I’m that mom that forgot to send valentines to school. 

I’m that mom whose son has been saying his shoes hurt his feet. I checked them and thought they were fine. Daddy checked them. Nope….way too small. Oops! 

But you know what else.

I’m that mom who loves her kids dearly and would do anything for them, almost to a fault. 

I’m that mom who is learning that it doesn’t have to perfect all of the time. 

I’m that mom who has figured out I can’t do it all no matter how hard I try. 

And I’m that mom who is becoming very ok with being that mom. 

On the Oil Train

A friend of mine has recently gotten into essential oils. I’m not very “all natural” or “granola” but her posts started to intrigue me and I am always striving to be healthy and provide a healthy environment and options for my family. I kept asking lots of questions about usage, cost, if they really work, etc. My biggest goal with looking into and using oils was to find something to help with stress relief and tension that I get in my shoulders/neck.

Earlier this month I finally jumped in and bought a Premium Starter Kit from Young Living. My biggest concern prior to buying the kit is that I would spend all this money and then not like the oils or use them.

The Premium Starter Kit comes with 11 essential oils, a diffuser of your choice, and a few other random goodies like sample bottles, NingXia Red, and a roller cap for topical applications. I chose the dewdrop diffuser because it would meet my needs and was the cheapest. Again, I was still concerned about spending money and not really liking the oils.

I got my kit exactly 3 weeks ago. Since I received it I have done a lot with it and used every single oil in it at least once.

Lavender

Love the aroma of this oil..in small doses. It can be strong.

  • Diffused alone and with Stress Away for a relaxing environment.
  • Made a roller bottle for topical application with Lavender and Stress Away. Great for that calming/relaxation at work or on-the-go.
  • Made a linen spray with Lavender. Great to spray the sheets and pillow with before bed.
  • Detox bath with Epsom salt, coconut oil, and lavender leaves me feeling relaxed and with super soft skin.

Lemon

Lemon has been my “go to” clean smelling oil.

  • Diffused with Purification for a super clean smelling house.
  • Added to my Thieves tea for flavor and respiratory function support.
  • Added with Thieves to my steam mop to help clean the floor.

Frankincense

This is the “king” of oils with so many uses. So far I’ve used it a couple of time

  • Part of my Tension Tamer body butter for tight shoulders and tired feet.
  • Made a roller for a friend to help with anxieties and fears.

Copaiba

This is a driving oil in that it helps increase the effects of other oils.

  • Used on my face for a youthful glow.
  • Added to my Tension Tamer body butter for tight shoulders and tired feet.

PanAway

Blended oil that is meant to assist with aches and pains

  • Primary oil in my Tension Tamer body butter for tight shoulders and tired feet. Great after a day chasing kids around or sitting at the computer doing work.
  • Made a roller bottle of this and Peppermint to assist with a throbbing head.

Peppermint

This is a workhorse oil! It seems to be in a zillion recipes and I’ve used it a ton. A little goes a long way.

  • Diffused with Lemon for increased focus.
  • Made a roller bottle of Peppermint and Lemon for a morning wake up and an afternoon pick me up.
  • In my throbbing head roller with PanAway.
  • One drop in Thieves tea helps to breathe easier with a stuffy nose.
  • Also in the Tension Tamer body butter for tight shoulders and tired feet.

Thieves

This blend of oils is nice because it has so many uses

  • Thieves tea was a lifesaver when I had a sore/scratchy throat. After a couple of cups over 12 hour period scratchy throat was gone!!
  • With its immune support functions and cleaning abilities, I added it to my steam mop to help clean up dog pee. Left the room squeaky clean and a wonder aroma!

Stress Away

My favorite of all the oils in the kit!

  • Diffused with Lavender for relaxation.
  • Diffused with Peppermint for relaxation and focus.
  • Roller bottle with Lavender for those stressful days at work and home.
  • Made several roller bottles for friends to try to assist with anxious feelings.

DiGize

Tummy discomfort be gone!

  • Have rubbed in on mine and my son’s abdomen to help with feelings of fullness.
  • Rubbed on my other son’s feet to assist with trouble going poo. Worked like a charm!

Purification

Clean smelling!!

  • Used topically on a few trouble spots on my face. I may not be a teenager anymore but my face still things so at times!
  • Love diffusing this with lemon! Makes my house smell so clean.

RC

This was the first oil I used when my kit came it.

  • With all the weather changes and germs this time a year I wasn’t feeling so hot. Diffused RC and helped open up my breathing. Think inhaling Eucalyptus!!

 

Overall I’ve really loved using essential oils and adding them into my life to help with overall wellness. And I’ve used the kit and oils more than I ever thought I would!! Do I think they are a magic cure all? No. Do I think that modern western medicine is a horrible thing and that is killing us all? No. What I do know from my personal experience is that if I can help an ailment with something “lighter” and natural like an essential oil I will do it. If it doesn’t work, well then I’ll go to my medicine cabinet or healthcare provider/pharmacy and get something else. There is room for both!! However, there is no need to kill a fly with a sledgehammer if I don’t have to.🙂

Product Review: Instant Pot

I am a busy working mom of 2 kids. I try to eat healthy and achieve home cooked meals for my family most nights. You know…no drive thru, no crap out of a box, all the main food groups, etc. etc. Given my work hours, commute time and our busy lives this becomes a struggle and I typically rely heavily on my slow cooker. Problem with it is I make all these great “dump” meals that I can freeze until I’m ready to use. Then I just thaw, cook it in my slow cooker, and wallah…..a fabulous tasting meal. Or in my case….not so much. Typically dry, overcooked, mush related to the length of time the food spends in my slow cooker and the high temps required of the manufactures for food safety. Because of my perpetual dilemma I went on a search for a better slow cooker or other option for my family. After some searching a found the Instant Pot!!

The Instant Pot that I have is an IP-Duo60. It is a 6 quart 7 in 1 multicooker. It is an electric pressure cooker, rice cooker, slow cooker, saute pot, yogurt maker, etc. And it makes the BEST. FOOD. EVER. (In my opinion of course). I have had my Instant Pot about 3 weeks and it has totally changed the way I make dinner. All those “dump” meals that would sit in the slow cooker for 10+ hours I now make in 30 mins after I get home. My first test was to make round steak one night. I had dinner on the table in about 25 mins start to finish and when I went to get the meat out of the Instant Pot it fell apart! Not only was it tender it tasted great. The next night I made a Caribbean Jerk Chicken recipe from The Crockin’ Girls but did it in the Instant Pot instead. It also was great and super fast. I’ve since made soup a Thai shrimp soup, cooked a whole chicken to have in the fridge for meals during the week, made pot roast, and finally found a way I can make rice that isn’t mushy.

This little appliance has totally changed the way I am able to make dinner for my family. If you struggle with how to work and get dinner on the table fast  with all your other responsibilities I highly recommend you check out the Instant Pot.

Steal, Kill, and Destroy 

At the risk of offending people and/or close friends disagreeing with me, I am still going to write this post because we live in a country with rights and freedoms and one of those is free speech. Another is freedom of religion and a third is the right to bear arms……

I believe people should have the right to bear arms. I also believe there should be some laws around gun ownership and purchasing (aka gun control); however, I do not feel that this will solve the crime and violence problem in our country. I believe this for several reasons. Until recently this was mostly based on evidence (some cities with the tightest gun laws have the worst crime/violence rates) but now it is also based on personal experience.

Earlier this week my husband was deer hunting on our family’s land. He was very clearly identified as a hunter wearing a hunter orange vest and hat. Around mid-day he took a shot and went looking for what he shot. Unable to find it he circled back around to where he had been sitting. At this time he was shot at. This shot missed him by a couple of feet and instead hit a tree near him.

The man that most likely shot at him is a convicted felon and a registered sex offender. Secondary to his criminal record he should not own guns or have access to guns. When the deputies showed up 30 mins after the 911 call and questioned him he denied having any weapons or shooting at my husband. Shortly after this a neighbor arrived and mentioned that this man has a gun(s) so the story changed and the man admitted that yes there was a rifle in the house but said it was his wife’s. This was an admission of guilt regarding having/having access to a gun(s), which in his case is against the law. Nothing was done by law enforcement at this time.

48 hrs later a warrant was finally served to search for the gun(s). Nothing was found. If I had to guess, he knew he was going back to jail if the police found firearms on the property so he hid them etc. At this point in time nothing has been done to this man and he probably still has easy access to firearms despite the law.*

My point in saying all this is that despite laws and rules the criminals will still find a way to get ahold of guns. The same way they have found ways to conduct sex trafficking and do/make/sell drugs. All of these things are illegal, yet are at all time highs in our country.

Does it sadden me that people keep doing these mass shooting and that people are killed everyday by guns? Yes. Does it sadden and enrage me that my husband was shot at and could have been killed? Absolutely. However I still stand by the fact that guns don’t kill people. People kill people, and right now we live in a very broken world. We have pushed God out of government, out of schools, and out of our lives. We are now seeing the results of those choices.

My prayer for this country is not who wins an election or which laws need to be put in place to “fix” these things because the only one that can “fix” us is Jesus Christ. He came into this world to love and show love. He died so that we may be forgiven. Until He becomes the center and focus bad things will continue to occur. Why? Well because the enemy (Satan) has come to steal, kill, and destroy, which is exactly what is occurring in America now. I pray that all the maddening and depressing events will open eyes and soften hearts to the one we really need–Jesus.
